Produced using organic and biodynamic farming, the grapes are manually harvested in early September to retain natural acidity and fresh aromatics. A portion of the must is set aside at low temperatures to preserve sweetness, which is later blended with the fermented wine and bottled, creating a slightly cloudy Pet Nat due to the natural second fermentation in the bottle.

Winemaker Francesco Cirelli, based in Abruzzo near the Adriatic Sea, brings his holistic approach to farming, incorporating vineyards, olive trees, and more into a sustainable ecosystem.
