The beans for this bar are sourced from Maya Mountain Cacao, Ltd., a social enterprise in southern Belize that partners with indigenous Mayan smallholder farmers. By purchasing freshly harvested, unfermented cacao and processing it at a centralized fermentary in Punta Gorda, Maya Mountain Cacao ensures precise control over quality and flavor consistency. This approach allows them to command premium prices for their cocoa, enabling them to pay farmers exceptionally well for their contributions.
Trevor, the Origin Lead for the Tokyo factory’s Maya Mountain bars in 2015 and 2016, appreciates the fruity flavors characteristic of Maya Mountain’s cocoa. While the beans are celebrated for their berry notes, Trevor’s use of higher-temperature conching lends this batch a richer, bolder chocolate profile.
