Pétillant Naturel (or "Pét-Nat") is a method of producing sparkling wine, also known as “Methode Ancestrale,” where carbonation occurs by bottling the wine during the primary alcoholic fermentation to capture the naturally released carbon dioxide. This sparkling rosé is made from estate-grown, Demeter certified Biodynamic® Pinot Noir grapes.
Block 3, a small northwest-facing section of the vineyard planted with clone 667, is farmed specifically for this wine. The goal is to achieve ripe fruit flavors and higher acidity, resulting in a fresh and juicy expression of Pinot Noir. The wine is bottled at the tail end of its primary fermentation and finishes fermenting in the bottle. It is unfiltered and contains lees; pour off slowly or invert to evenly distribute.
