Sweet and enticing on the nose, it presents pronounced aromas of cooked apples, olives, and freshly cut herbs, all gently wrapped in a veil of smokiness. The palate is rich and textured, offering an extraordinary complexity with dominant herbal and fruity notes, accented by hints of spice, roasted agave, and zesty citrus. Tasting highlights include yellow apples, star fruit, lime, cucumber, pineapple, and celery.
Artisanal Crafting
- Espadin: Aged 5–7 years, milled by a horse-powered stone, roasted in conical pit ovens, naturally fermented in wooden casks, and distilled in copper stills.
- Tobasiche: Aged 17 years, extracted manually, roasted in conical pit ovens, naturally fermented, and distilled in both copper and clay stills.
